FOB Sushi

FOB Poke & Sushi Bar is unlike any other sushi restaurant. Opened in 2026 in Tukwila’s Southcenter area, its by-the-pound model allows you to mix-and-match individual pieces of sushi or create a customized poke bowl. Quick, convenient, and delicious, it’s a great stop between shopping trips or after visiting one of many nearby attractions.

Highlights

Maximum Customization: As soon as you enter, you can grab a tray or box and fill it with any kind of sushi you like, then pay by weight. Since you don’t have to commit to a whole order, you can be a little more curious and adventurous than usual.

Lots of Variety: In addition to classic salmon and spicy tuna rolls, you’ll see seared ahi and salmon, gunkan, nigiri, and inari with all kinds of interesting fillings.

Fresh Poke Bar: Next to the sushi bar is a poke station where you can customize a bowl of poke, filling it with all kinds of healthy toppings such as edamame and seaweed salad.

Cold Drinks: Pair your meal with a Japanese beverage from the self-serve fridge.
